Today, I’m doing frozen pasta… one from the store, and then I’ll also look at week one’s results from our freezer experiment.

Trader Joe’s Spaghetti with Meat & Sauce is a frozen, microwavable, single-serve entree… is it any good?
Spoiler alert: I may be experimenting with frozen pasta, but Trader Joe’s has it figured out. All you have to do is pull the microwave-safe cardboard tray out of the box, punch a few holes in the film, and toss it in the microwave for a few minutes. While it cooks, it fills the kitchen with a mouth-wateringly meaty aroma (similar to how the Trader Joe’s frozen lasagna smells when it bakes).
It doesn’t look like much when it comes out, but don’t let that put you off. If you like slow-cooked, meat-forward tomato sauce on your spaghetti, this dish is for you. The spaghetti has a great, near-al dente texture (similar to our rotini experiment, actually), and a neutral flavor that lets the sauce shine.
The sauce texture is a little dry, so that instead of truly coating the spaghetti, it’s more like chunks you twirl into your spaghetti. The herbs and spices are well-incorporated into the ground beef and pork so that it tastes like bulk Italian sausage. The flavor is bold but balanced, with a little bit of heat. Well-mixed on a plate, you wouldn’t be able to tell it was frozen since there’s no off-flavors or odd aftertaste. It tastes like something that was slow-simmered all day with care.
This is a convenience food made in Canada, so it’s not making any claims about authenticity and it doesn’t have to. Spaghetti with meat sauce is a classic comfort dish. Trader Joe’s Spaghetti with Meat & Sauce tastes like classic comfort. I paid $4.49 for a 14 oz (397g) single-serve box at Trader Joe’s in Williamsburg, VA, which seems like a reasonable price to pay for an easy, comforting lunch.
Nothing in the ingredients looks weird, although those with food allergies or sensitivities should note that it contains both wheat and milk. This is a convenience food with no pretensions at being healthy, so it contains 990mg of sodium and 5g of saturated fat, though it does not taste particularly fatty or salty. The package is 490 calories.
Do I recommend this? If you like slow-cooked, meat-heavy tomato sauces and convenience, absolutely.
🍝 The Frozen Rotini Experiment: Week One Results
Last week, the experiment began. I cooked a box of rotini, divided it into four portions, let it cool, bagged it, and put it in the freezer. This week, I thawed the first portion and gave it a try.
After thawing overnight, the rotini looked a little bit icy, but otherwise looked like… cooked rotini. Cold, it had a weirdly grainy texture. It wasn’t hard, it wasn’t mushy, and it wasn’t al dente. Flavor-wise, it tasted unpleasantly like how wet cardboard smells and like something that came out of the freezer.
Yuck.
I thought the experiment was a total failure. Then, I threw it in the microwave for thirty seconds. I normally don’t associate the microwave with kitchen miracles, but I may need to rethink that stance. See, once I started bombarding the rotini with radiation, something magical happened.
It completely transformed into something edible. The grainy texture went away, replaced with something just past al dente. Pleasant, subtle wheaty notes replaced freezer-burned cardboard. The only lingering evidence that it had been frozen was a slight starchy coating, something that would not be noticeable if it was sauced.
So… one week in… yes. It’s still good. Next Friday, we’ll see how week two went.
